Method
- Preheat oven to 350 degrees and line 2 muffin tins with cupcake liners or parchment paper.
- Peel and mash bananas in a small bowl and set aside
- in a small bowl combine the 4 dry ingredients.
- In a large bowl combine the eggs, Greek yogurt, vanilla extract, and honey. Whisk well until all combined then fold in the dry ingredients. Fold in the mashed bananas and mix well. Add the chocolate chips and stir.
- Pour batter into the prepared muffin tins and bake for 20 to 25 minutes.
- Let cool and then take out of the tins. Store in an airtight container for 2-3 days or 5-6 days in refrigerator.
