Christmas morning should be spent with family and not fussing in the kitchen. This brunch consists of quiche (recipe makes 2) and a twist on traditional monkey bread. Savory and sweet combined with less prep time in the kitchen make this a great option for hosting family and friends for breakfast. Add one of my festive cocktails (mocktails) from the Comfort Food Cookbook and you have it covered.
Bacon & Cheddar Quiche
This is a great recipe to change up the way you like; you can change the protein, cheese, and add veggies also. Make each quiche different, one with protein and the other with cooked broccoli.
Servings: 8
Ingredients
- 6 eggs
- 1 cup milk
- 1 can Cream of Chicken Soup
- 1/8 teaspoon red cayenne pepper
- 2 deep dish frozen pie crusts
- 8 once cheddar cheese or whatever cheese you have or prefer
- 1 lb. cooked and crumbled bacon can use sausage or veggies (cooked)
Instructions
- Mix the first 4 ingredients in a bowl with a wire whisk or a hand mixer.
- Divide the cheese and bacon between the 2 pies crusts and layer into the crusts.
- Pour the egg mixture over the cheese and bacon.
- Bake for 10 minutes in a pre-heated 425-degree oven, then turn down to 350 degrees and bake another 40 minutes or until firm and crust is golden.
Cranberry Monkey Bread
The addition of the cranberry sauce gives traditional monkey bread so much flavor and the festive red color!
Servings: 8
Ingredients
Cranberry Sauce
- 12 ounce bag of fresh cranberries
- 3/4 cup orange juice
- 1/4 cup water
- 1 cup sugar
- 1/8 teaspoon cinnamon
Monkey Bread
- 3 cans Pillsbury refrigerated cinnamon roll dough 12-ounce cans
- 1 cup sugar
- 1 tablespoon cinnamon
- 3 tablespoon unsalted butter
Instructions
- I typically make the cranberry sauce at least a day ahead for less prep on Christmas Morning
- Combine the orange juice, water, and sugar in a small saucepan and bring to a boil. Add in the cranberries and cinnamon and cook on med-low until the berries burst open and the sauce thickens.
- Let cool, then store in refrigerator until ready to use.
Monkey Bread
- Preheat oven to 350 degrees
- Spray a bundt pan with cooking spray and combine sugar and cinnamon into a small bowl.
- Open the cinnamon rolls and cut into 1/4 pieces and then roll in the sugar mixture
- Layer the pieces into the bundt pan and then layer cranberry sauce over each layer and repeat until all cinnamon roll pieces are in the pan. (I use about 1/2 of the sauce and save the rest you can be more liberal if you love cranberry)
- Combine the butter (melted) with remaining sugar mixture and pour over the dough.
- Bake at 350 degrees for 30 to 35 minutes, or until golden brown
- Take a plate and put under the bundt pan and the bread should come out of the mold. Use the frosting that came with the dough to glaze the bread.
