Homemade Nut Goody Bars
These bars are just too good to be left out for Santa. But I assure you the elves somehow find them, and they disappear fast!
Ingredients
- 1 12 oz bag of semi-sweet chocolate chips
- 1 12 oz bag of either milk chocolate or dark chocolate chips
- 2 cups butter
- 1 cup peanut butter
- 1 can cocktail peanuts
- 1/2 cup evaporated milk (4 oz can)
- 1 box (4-serving size) vanilla pudding mix, NOT instant
- 2 teaspoons maple extract
- 1 bag (2 Lb) powdered sugar
Instructions
- Line a 15X10X1-inch baking pan with foil. Coat with cooking spray.
- In a 3-quart saucepan, melt chocolate chips and 1 cup butter over low heat. Stir in peanut butter. Pour 2 cups of the mixture into a microwavable bowl.
- Stir the peanuts into the remaining chocolate mixture. Pour into the prepared pan and freeze for about 10 minutes or until set.
- Melt remaining 1 cup butter in a 4-quart saucepan over low heat. Gradually stir in evaporated milk. Stir in pudding mix. Cook until mixture is slightly thickened, stirring constantly. DONOT BOIL. Remove from heat and add maple extract, then stir in powdered sugar a little at a time; mix well. Cool for 10 minutes.
- Carefully spread pudding mixture over chocolate peanut layer. Chill 30 minutes.
- If the remaining chocolate mixture is not too thick, melt in microwave in 30 second intervals so it is pourable. Pour mixture over the chilled pudding layer and spread to cover. Refrigerate for at least 3 hours or freeze until firm. Using foil lift the bars out of the pan to a cutting board and cut into small rectangles.
- Store in the refrigerator
